How to Ruin a Perfectly Good Potato? Process It

The much-maligned potato offers more than it's given credit for. A large baked potato is an excellent source of vitamin C, potassium and vitamin B6 and provides almost five grams of protein and five grams of fiber. Unfortunately, not all potatoes make it to the table with,these nutritional benefits intact.
