Add Chard for a Colorful Health Palette

Along with beets, spinach and quinoa, chard (Beta vulgaris) is part of the chenopod, or goosefoot, family, so named for the shape of its leaves. Stems of green, white, red or yellow support deep green voluminous leaves that grow over two feet high. Its vibrant color palette indicates its variety of phytonutrients—plant chemicals rich in antioxidants and anti-inflammatory properties. Highly dense in nutrients, one cup of cooked chard has just 35 calories, and packs over 700 percent of the Daily Value (% DV, needs based on 2,000 calories per day) of bone healthy vitamin K, 214% DV for vitamin A, and 53% DV for vitamin C.
