Trans Is Toast, But What’s Taking Its Place in All Those “Trans-Free” Foods?

Q. More and more foods boast they’re “trans fat free.” What’s in them instead?
A. Many processed foods ironically substitute palm oil, which is 50% saturated fat, or use palm kernel oil or coconut oil, which are even more saturated, not exactly a healthy tradeoff.
