Eggs by Design: A Little Fish Oil, a Little Vitamin E

Eggs arenít just eggs anymore. What used to be a simple choice of large, extra-large or jumbo is now complicated. The idea for designer eggs was hatched when poultry producers discovered that by altering the diet of hens they could enhance certain nutrients in eggs. For example, adding omega-3-rich ingredients like flaxseed, algae, kelp, fish oil and canola oil to chicken feed produces eggs with three or more times the normal amount of omega-3 fatty acids.
